Snack-Sized Huevos Rancheros




















If you've never tasted the delicious latin glory of huevos rancheros, you've missed out. Personally, I had never heard of huevos rancheros until one morning when I was getting my daily fix of Breaking Bad. Jesse served his girlfriend living next door (of course if you're familiar with the series, this is pre-mortem...I digress) this delectable dish. I looked it up, and took a shot at making it, and immediately fell into a food coma upon completion of devouring my breakfast of the gods.

What is huevos rancheros? Simply put: a flour tortilla smothered in enchilada or chile sauce with two eggs (cooked to your liking), smothered in cheese.

I, on the other hand, simplified this recipe to college student/midnight cooking level. Being that I made this particular recipe at about 1 in the morning, I had no interest in making a big 'ol plate of this. The solution: fajita tortillas!

What you will need (serving size: one):
-One egg
-One fajita sized tortilla
-1 1/2 tsp olive oil
-Salsa
-Cheese, preferably cheddar, mozzarella, or mexican blend


























Optional:
-Tomatoes
-Green peppers
-Sour cream (to top)
-Guacamole (to top)


Step one:
Heat your oven to 350 degrees. While the oven's warming up, place your tortilla on an ungreased cookie sheet and spread the olive oil onto the top of the tortilla only. Make sure to get as close to the edges as possible.






















Once the oven is heated, place your tortilla in the oven. If you want your tortilla extra crispy, keep in the oven for roughly 3-4 minutes or until lightly browned, otherwise, it should only have to stay in the oven for 2 minutes maximum, or until the tortilla starts to look bubbly. Take out of the oven, but don't turn off the oven.

Grease a frying pan and put under medium heat. Fry or scramble your egg; personally, I like making my eggs over easy so that the yolk is still kinda runny, yum. At this point your tortilla should be pulled out. Put a heaping spoonful of salsa down the middle of the tortilla. Place the egg on top and cover with cheese to your liking.

Realizing I didn't have salsa, I sort of improvised and used some garden peppers and grape tomatoes. Delicious!




















Place back in the oven until cheese is completely melted (about a minute). Take out of the oven. Serve with sour cream, or in my case sriracha, and you're all done!





















Note: to make huevos rancheros as a full meal dish, use a regular sized flour tortilla and double everything else.

Step-By-Step DIY Lace/Ribbon Cardigan

I got the idea for this when I was out shopping and saw a cardigan like this in the store. It was extremely cute, but ran up a $48 price tag. Yikes! The solution? Put the darn lace on myself!















What you will need:
-Lace or Ribbon (needs to be long enough to run the length of BOTH sides of your cardigan)
-Thread to match lace/ribbon
-Sewing needle
-Pins

Optional:
-Buttons that match the lace/ribbon to add contrast
-Sewing machine

No Sew Method (skip to step 3):
-Fabric Glue


Step One: Obtain Cardigan



















I nabbed this from a Salvation Army a couple years ago for only $1 due to some minor staining. Lucky for me, most of the stainage was covered by my lace!





















Notice these on the sides for the first time ever while I was taking pictures. Looks 10x better when they're changed!

Step Two (optional): Change Buttons



















The white buttons on this cardigan weren't really doing it for me. It was very one-note for me. To change it up, I purchased black buttons, seam ripped the old ones off, and sewed the new ones on. Ended up running short on black buttons, so I had to find some laying around later, AFTER this part.




















Done! On to the lace...

Step Three: Adding the Lace



















Cut your lace to the length of your liking then pin it to the sides, next to the buttons and button-holes, being sure that the lace isn't too close if you want your buttons to be a functional part of your cardigan.

Next, using your sewing machine (or take your trusty sewing needle if you don't have a machine) and sew all four sides of the lace down. There should be no other reinforcement needed.

If you're using fabric glue, CAREFULLY apply glue to the top backside of your lace and lay it down on the cardigan keeping it as straight as possible. Working down, apply the glue to the cardigan and press the lace on top. Allow the glue to dry as long as the glue you're using instructs.

Realizing that I had some lace to spare, I couldn't leave this pocket untouched! A little touch of sewing magic and...



















Viola!

I also added on those extra buttons that I mentioned earlier.

Now you have a fabulous new refashion! Couldn't wait to wear this one out! :)
